Like turmeric, cauliflower has a host of healthy benefits. One interesting benefit is it contains a compound called sulforaphane, which activates pathways that makes antioxidants more available and reduces oxidative stress in our brains. It works to protect the brain from central nervous diseases like Alzheimer's, Parkinson's, stroke and more.
Turmeric Cauliflower & Cabbage Slaw Taco Recipe
Ingredients:
- 1 head of cauliflower cut into 1-inch florets
- 1 tsp salt
- 1/2 tsp ground pepper
- 3/4 tsp ground turmeric
- 1/4 cup olive oil
- 1/2 tsp cumin
- 1/2 tsp paprika
Cut cauliflower into 1-inch florets. Place in a large mixing bowl with all ingredients and mix well. Bake at 400-degrees for 15 to 20 minutes or until golden brown.
Slaw Ingredients:
- 1 cup red cabbage finely chopped
- 1 cup green cabbage finely chopped
- 1/2 cup red onion in thin slices
- 2 carrots grated
- 1/4 cup fresh cilantro finely chopped
- 1 lime squeezed
Mix all ingredients well. Serve cauliflower over rice or tortillas with cabbage slaw on top.
